if someone is a subscriber to my blog and reads the blog, does it count in my stats as a “visit”?

No. It counts as a subscription. You only get a hit on the blog when someone goes to the blog on the web.

Depends – if you want the click to your site send the email as a summery
Dashboard >> Settings >> Reading >> For each article in a feed, show >> Summery
Then your subscribers get a summery and click on the link to your site for the whole article. Nice way to do things if you have large Posts.
