Hi –
You’ll find the setup instructions for Penscratch-2 theme here:
https://wordpress.com/theme/penscratch-2Give that a look. The first section talks about the header image.
Write back if you continue having trouble.
The header image will be edited by clicking on My Sites – Customize – Header Image

I’m using the Sketch theme and am trying to do the same thing but don’t see the option under Customize > Header Image. If it helps, I’m hosting my own site and have installed JetPack.
On the demo site, they do not have the homepage header image on the other pages : https://sketchdemo.wordpress.com

The Sketch demo page does not have a custom header enabled at all, nor is the home page showing a header – that page is showing the portfolio slider included in that theme’s Portfolio Page Template.
For the self-hosted version of Sketch the best place to ask for help in https://wordpress.org/support/theme/sketch, and I see this question has already been answered there:

To have a header show on only the front page in Sketch you’ll need to add a custom header, and then use custom CSS code to hide it on the pages where you don’t want it to display.
