Remove hyphen and centre photo caption text

  I’m new to CSS customisation and I’m have trouble understanding where to insert amended code and what code needs to be deleted (if any). My blog is http://all4ballet.com/.
  I have read a forum about removing the hyphen and centring the caption text under all the photos in my blog but have had several unsuccessful attempts at attempting to do this as I can’t understand where to insert the CCS to make a global change. Would you kindly help me please? Thanks
