  Final, final question: is it possible to take down/hide my old site ( http://www.flowerfolkherbs.wordpress.com) since I only use the domain flowerfolkherbs.com?

  Your domain is connected to the WordPress.com site – that is what allows you to manage the domain. It’s not possible to delete that site without first cancelling the domain, or transferring the domain away from us completely.

  But you can set the WordPress.com site to private at My Site ->Manage ->Settings, or a better option, if you go to My Site ->Manage ->Domains and set your flowerfolkherbs.com domain as the primary domain on the site, not only won’t people see the WordPress.com site, but we’ll automatically redirect them to your site at the domain instead.
