Reproduce old image embed in new editor or return to classic editor

I asked about this problem before, on 1st Dec 2020, but then the classic editor return. Today the new editor returned and so my problem. Ideally I would just return to the classic editor, but I don’t know how.
I want to write a post in new editor (since classic editor has been disabled) in a consistent way to old posts.
All old posts have been converted to the new editor as a single ‘classic’ block. Within this block, all images are marked as ‘links’. I can’t open settings of these to see how to reproduce the same look in new posts. I can only copy-paste them, but when chosing an option to switch to a different image (‘edit’ pencil icon), the functionality changes (‘link’ icon is no longer highlighted when the image is selected, as well as dimensions are different etc.).
When converting whole ‘classic’ block to blocks, the image becomes an ‘image’ block, which behaves as in old posts, and I can access its settings to see how to reproduce it. I’m not sure I can reproduce it fully for new images, but it seems I need to manually specify thumbnail dimenions each time.
So is there an easier way, ideally as similar to the old way as possible, to keep the consisent look?

Hi. WordPress.com has recently combined the Calypso and WP-Admin sidebars into one, as described in the forum topic Unified Navigation. The damage can be partially remedied by choosing the “Show advanced dashboard pages” at Account Settings > Dashboard Appearance, as described in the Dashboard Appearance section of the Account Settings support page.
The Classic Editor is still available to all WordPress.com users, and it’s still free. Here’s the Classic Editor support page, and the recently revised How to Access the Classic Editor section of that support page.
