How can I change the order of my project types (now it is alphabetical)

Hi, it appears to me that the order is by date with the latest first. There isn’t a way to set a different order of the Portfolio Projects in the grid.
If you use the Portfolio Shortcode, you can set a different order as explained in the last two attributes here, and you can also set the number of columns by attribute. The Portfolio Shortcode has more simple styling to it than the full portfolio since it is designed to work with any theme whereas the full portfolio has special styling built into the theme.

I do not mean the portfolio projects, but the project types (Geometric Shapes, God Bless, Installations, Limited Prints, Outdoors, P-Man, Paintings, The Kid)

Sorry, no that is not possible. Well, it sort of is possible. What you have to do is to edit each of those projects and change the publish date so that the one you want first has the latest date and/or time, if they are all published on the same day. Make God Bless one have the latest date, the GB two older than that, then GB three older, etc.
You can do the above quite easily. Go to this page in your dashboard, hover over GB one, click on Quick Edit and you can change the date and/or time there. It looks like all of the GB projects were created on 3/20,/2016, so I would suggest just changing the times.

hi again, maybe I did not make myself clear, I do not mean the project themselves, which I have already done what you suggested but how they appear here
