REST API – necessary?

  We have a fully designed site, the Site Health reports that we are getting 500 errors due to the REST API. I’ve explored every avenue except for turning off the REST API. What would some of the consequences be of doing this and is there an easy way to turn it on/off? Thank you for your help!
