I choose the two column setting. -
This is an image of your “My Blogs” page. Although it has its uses, I rarely use it, myself. Although it is odd that your “screen options” aren’t saving, I think that you will find that as you post more to your blog, you may use that particular screen less.
Does your “all posts” page look normal to you? Unless you have multiple blogs, you will likely use “all posts” much more frequently than “my blogs.” If you have difficulty having the “all posts” page look correct, with the columns you have chosen in your screen options, let us know. You may need help from the wordpress support team, though.

I have a multiblog site so I must use the My Blogs option
The All Post looks correct. The My Blogs does not look correct. -
As an option you can access and switch between your blogs from the “blogs” pulldown in the top grey admin bar. That is much faster than going to the “my blogs” page in the dashboard, waiting for it to load and then clicking on the blog title. Just a suggestion.

Suggestion OK. Yet sometimes need My Blogs to see which are invisible, or to set Primary blog etc
