I need to know if I take the e-commerce plan can I sell products with unlimited options for customers to choose from? for example if my product comes in 50 or more colour ways and 200+ font styles can I have a drop down menu for customers to view and select each colour way/font style? hope this makes sense

This depends on whatever ecommerce plugin you use. The plan only gives you the option to install plugins. It’s the plugin itself that determines what options will be available.
With the eCommerce plan the WooCommerce plugin is pre-installed, and that plugin does allow for multiple variations of a product.

As far as I know there’s no limit on the number of variations you can have on a single product. But you should know that the more variations you add, the more data the product page will be required to load, which means it will take longer to load, and a greater risk that the page will time out on your visitors.
That said, if I go to an online store and have to scroll through a drop-down of 200+ options to select a product, I’m going to leave and go look for the product somewhere else with fewer/simpler options. I understand you feel you need to offer all these options, but you need to consider the experience for your customers as well.
So I’d definitely try to narrow down the options, not because of a limitation in the software, but to make it easier for your customers to find the options they want.
