I have several different types of subjects that I want to use for my website. How do I set different pages as blog post pages?

You may consider arranging the posts of different subjects to be assigned to different categories.
And to display individual categories of posts on the same page, you can make use of the Category Page: https://en.support.wordpress.com/category-pages/
