Is it possible to modify the post format when posting via e-mail?

At this time it is not possible to set a post format in posts by email, though I will be happy to suggest it to our developers. Sounds like a good idea!
In the meantime, you can use shortcodes to add the following to your posts: http://en.support.wordpress.com/post-by-email/#shortcodes
