Setting up a blog separate from my home page

I created this page https://lizseicooks.wordpress.com/cooking-with-lizsei/ as the page I want to set up my blog on. How does it work as a blog? I can’t seem to edit photos or anything. Will someone please point me in the right direction and explain ? I tried reading the article but it only made me lost.

A posts page can be set via Appearance > Customize > Homepage settings > select ‘A static front page’ > select a front page from the front page drop down > select a posts page (cooking-with-lizsei).
How does it work as a blog?
For a blog, everytime an article is created and published via Posts > Add New, this post will appear on the set posts page as above.
The posts page will look like this: https://canapedemo.wordpress.com/news/?demo (theme demo)
I can’t seem to edit photos or anything. Will someone please point me in the right direction and explain ?
Photos can be edited via Posts > select a post > edit.
Which image in particular do you need help with exactly?

Ok, I’m running into two problems. First – how do I get the theme demo page into my site? I can’t find it when I go to add a new page. So instead I just put a blank page and then inserted a blog posts block.
Second, I can not edit photos. Right now, there are stock photos in there and I want to replace them with my own. When I go to the post page I want, I don’t even see the stock photo at all – https://wordpress.com/post/lizseicooks.wordpress.com/2
So how can I edit it if it isn’t there?
I am confused. Please help!

So, I set up a blog page using a blank page and set as posts page. How can I limit each one so that all the text doesn’t appear on the page and instead only the first sentence does and so that people can click on it and read the entire post on the post page? Hi there,
When you set up your blog page in that way, it displays the full post (as designed by the creator of this theme) and does not have the option to cut the text off at a certain point.
However, you can get around this by setting up a custom blog page using the Blog Posts Block. To do that you will first want to “un-set” it as the posts page here: https://lizseicooks.wordpress.com/wp-admin/customize.php
Under the “Homepage Settings” tab, unselect the post page so the setting looks like this instead of what it’s set at currently:
This will stop your theme from taking over the blog page (with it’s built in styles) and instead show the contents of the Blog Posts Block that you already added on that page.
From there, the Blog Posts Block has quite a few settings you can use to tweak the appearance of your blog page to your liking. This is difficult to explain in words, so I recorded a quick video to show you how to find and experiment with the layout settings found in the Blog Posts Block.

Thanks, that helped! I used the blog block instead except there’s a new problem – where it says “by lizseid” and the date, it’s all off and looks funky. It’s not formatted correctly. How do I fix this?

Ack! I see the issue you are referring to. The theme you are using is an older one (released before we had blocks) and while it is broadly speaking reverse-compatible, there can be small issues like this where your older theme does not understand what your newer block editor is doing.
That seems to be the case here, so I’ve reported this to our theme team so they can take a closer look. In the meantime I have added some custom CSS code to your site to correct this issue (for your site only) so you do not have to wait for that fix.
For the sake of transparency you can see the code I added here. No need to deal with that at all, I just wanted to point it out.
