1. I want to change the name of a category that I have set up. How can I do that?
2. Every time I look at my blogs the edit button is active. Can anyone edit my writing? How can I stop that?
3. Is it possible to have a menu on the cover page that will allow readers to see/select what is available?
4. Where do I see if the categories are working?The blog I need help with is: (visible only to logged in users)

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

2. To edit/delete categories in your dashboard go to Dashboard → Posts → Categories

* You will have to replace “name_of_blog” with your actual blog’s name in that URL.
3. To edit or delete dynamic category pages in your custom menu go to Dashboard > Appearance > Menus

Do not worry. That was because you were logged in here.
There is an Admin Edit link on posts and pages that only you as Admin and any Editors you have created can see when you are logged in. It’s for your convenience and your visitors cannot see it. You cannot remove it as it’s coded into the theme templates and we cannot edit templates or themes.
The only people who can edit your site are those you provide that ability to. See here https://en.support.wordpress.com/user-roles/ and here please https://en.support.wordpress.com/email-notifications/
If you log out, clear your browser cache https://en.support.wordpress.com/browser-issues/#clearing-your-browser-cache and cookies https://en.support.wordpress.com/browser-issues/#clearing-wordpress-com-cookies and then visit your site without logging in that links will not appear to you.
Additional information re: contact forms and comment boxes and autofilled information
Note that there will be auto-filled information in a contact form or a comment box but your information is visible to you when you are logged in and have not cleared your browser cache and cookies. No one else can see it.
When someone makes a comment on your blog, unless they have cleared their cookies https://en.support.wordpress.com/browser-issues/#clearing-wordpress-com-cookies, WordPress.com will recognize them and complete the details for them. No one else will be able to view those details in comment boxes or in contact forms. The next person who comments will see blank fields. Commenters will not see each others details.

Where do I see if the categories are working?
After they are assigned to posts and the posts are published scroll to the bottom of the post.
