  I would like to have an e-commerce plugin in our site. I like the wordpress ultra simple paypal shopping cart and thought it would be easy to install. It looks like you have to do that for me though since I have wordpress.com

  You should consider third party specialized shopping cart sites likes http://bigcartel.com/ or http://www.shopify.com/

  We switched from wordpress.org when we got an offer from wordpress to have a .com address. What happens if we switch back to .org?

  You should be able to switch back and have the domain point back to your self hosted server – see the following support document for details:
