show only latest post from certain category on page

Hey,
I’d like to have a page where only the latest post from a category is displayed custom to any other category. I’d also like to show the complete archive of that category (apart from the latest) with just a text link for each below the latest post.
I’d also like to be able to show just the title & one of the custom fields from that latest post on the sidebar.
Would anyone be able to tell me what the best approach may be and how I might do it? I’ve looked at several “posts on a page” info but i’m confused!
My site is rockonpublishing.co.uk and what i’d be using this for is to recommend 1 artist a week/month and have the page dedicated to that recommendation with the archive of every previous recommendation apart from the latest listed below.
