Do some themes not have a sidebar? I’m considering upgrading to a premium theme but when I preview it I can’t find my sidebar. Do some themes just not have them? Are there ways to get round this? I need to know before I buy a premium theme whether this is the case or not.

You’re right, some themes do not indeed have a sidebar and you’ll want to be careful of that. Some also have sidebars only on pages but not on the blog page (and vice versa).
The best way to tell for sure is to go to the theme’s info page (you can find them all here: http://theme.wordpress.com/). There is a button on the right side of the screen for each theme which says “Live Demo.” You can explore an entire test site set up in that theme which should give you an idea of what you’re getting before you “try it on.”
Also, keep in mind that we have a 30 day, no questions asked, refund policy on all of our products (except for domains). If you don’t like your premium theme, cancel it in your dashboard within thirty days and we’ll refund you! Make sure you do it within the month though because it is definitely a strict 30 days! :)

Thanks for getting back to me. Hmmm….I think I really love a particular theme (called Avid) and when I’ve checked it doesn’t seem to have sidebars. Does that mean that i won’t be able to get any widgets? Maybe it doesn’t show any on the live demo because I’ve set up my pages a certain way? If you have a moment anyone could you let me know that this is definitely the case with Avid i.e no sidebars and no widgets?

The Avid demo is right here:
Avid is quite complicated and in order to get the photoblog look that it is known for, you will need to follow the instructions which they include on the theme site.
That said, it does look like on their pages you can have sidebars as well as footers:
