I’m completely new at this, and have a few questions before I buy. First, how many sites can I build through purchasing a premium or personal account? I would like to see the functionality but it is asking for my domain name before I start. Do you have to purchase a domain name before getting started? Reason being, I haven’t settled on a business name yet.

First, how many sites can I build through purchasing a premium or personal account?
You can create unlimited sites on the Free Plan on WordPress.com, however each plan is per site, not per account. That means if you want two sites with a paid plan, you’ll need to pay for that plan twice.
I would like to see the functionality but it is asking for my domain name before I start.
You’re welcome/encouraged to first create a site on the Free Plan, which will give you a free .wordpress.com address that you can change later, and then register a plan.
When you purchase a paid plan, you have 30 days to cancel it and receive a full refund. However, you’ve only got 48 hours to cancel a custom domain, so you might not wish to register a custom domain yet, especially because you’ve not settled on a name yet.
