Site migration

I am working to migrate my site from wordpress.com to another hosting provider. I am unable to download the entire site. I have tried several times to get a copy of everything. I am able to get the content / images and videos. I am able to get the posts and other texts from the SQL database. However, I am still missing the following: Pages, Plugins, Themes, and Categories. I know that in order to get all of the items for a successful migration, I will need my site upgraded to the professional package for a small timeframe to allow me to capture this data. Can you help me with this? Get my site upgraded for a short time frame, and then pointed me to the location to download the entire site for migration?
The site I need help with is [visible only to staff] (email visible only to moderators and staff). It is not hosted by WordPress.com, but it is connected with Jetpack.
