Site on WordPress, Email elsewhere

I have a client who is moving their website to WordPress – this is already done. Their old hosting account is about to be turned off, but we realized their email is still at the old hosting account.
I know we can continue to pay the old hosting account to maintain the email, but what do most people use for email who have WordPress with a domain mapped to their own domain name (ie. http://www.mywebsite.com) ?
If we change the name servers to point to the new WordPress site, their email stops working. (the domain is registered with network solutions).
I was told I can enter MX records to point to the old hosting email – but where do the MX records get updated, at network solutions, or WordPress…?
Any help GREATLY appreciated!
