What is the best way to structure a Blog with various sections like Technology, Business, Jokes, etc. MY goalk is to publish various articles and videos under each section, with an easy interface. I don’t see how this can be done with Categories only.

See the Entertainment Tab. I have 3 videos in it, but do not see them.

As to your question. Blogs, for the most part, have a post page and then static pages. A post page is where all of your posts show up. A static page is semi-permanent stuff – and you cannot put posts there. Take a look at this FAQ http://faq.wordpress.com/2006/11/11/a-post-and-a-page/
When you categorize your posts, and a viewer clicks on that category, a page containing the posts in that category is created on the fly – see here http://motii.wordpress.com/category/technology/ So yes, it can be done with categories.
I think what you are trying to do is have those pages in the links at the top. And there is a trick to putting category pages up there. The trick is to have the category page be the page name. If you put
<a href="http://motii.wordpress.com/category/technology/">Technology </a>in the page name, that page will be listed at the top. (Assuming that this trick works with your theme – you’ll have to try it as it does not work on all themes.) Note that the page name has to be two words OR a word and a space.
So rather than having an entertainment page, you would post your entertainment items to your blog as usual, categorize them as entertainment, and then create a category page like that above.

Also note that your main page normally shows all your latest posts (regardless of category): if you wish to avoid this mixup you can set up a static front page, so that readers can only access your posts via the category tabs.
