Sketch theme – I am stuck

I’m trying to get the sketch theme to work however I’m struggling massively. I want my homepage and contact page to feature nothing but text (which has worked) although the Portfolio page which features my blog posts will not let me change the page attributes to portfolio page template. Also whenever I publish anything using Portfolio it does not display anywhere on my website.
Am I missing something here? I tried following the instructions best I could however I think I need to learn more about wordpress… Educate me please.
