Sketch Theme – Support Sub Portfolios?

Hello all
I am quite new to WordPress but have been getting on ok with it so far.
I’m using the Sketch Theme (theme.wordpress.com/themes/sketch/) and wanted to know if it was possibly to create sub portfolios?
For instance, this is the site I am building currently,
http://www.scribblesprout.co.uk/The top three projects I do not want to display on the main page, I would like them to display under the ‘Games’ project –

(If you hover over the Portfolio item in the header menu you can see how I would like these child pages to map out).Is anyone able to help? Know if this is possible?
If it is not possible can anyone suggest me an alternative theme?
(You may have also noticed the thumbnails do not display correctly either, I want my thumbnails to be 200×200 but default is 349×349. I’ve checked through the editors trying to see where I can change this but have had no luck. I was going to make a separate thread for this issue but if anyone knows the answer it would be great to know also).

With some custom CSS, you would be able to hide certain portfolio projects on the main page.
