Starting all over

Hello,
1) I would like to create 2 catégories only : 1) articles ; 2) parfums.
2) Under the first category, The articles should appear on the ordre I choose ; under the second, I would like them to appear in alphabetical order.
3) I would also like my research box back and all previous categories erase, including la ‘Guerre des Fleurs’, I am unable de get rid of.

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

This is a one or the other situation. You have two choices on any blog
(1) All posts on the front page.
(2) A static front page http://en.support.wordpress.com/pages/front-page/ and all posts on a different page.By default the front page of your blog displays all published posts (not pages) in reverse chronological order, with the most recently published post on top. That is for the convenience of your returning visitors, who come to read your latest post, and who are not likely to be happy with being compelled to click through the same static page with the same blah, blah, blah on it every time they visit the blog looking for the latest post.
However, if you do not want all the posts to show on the front page, then you can create a static front page called for example “Welcome” for your site and a “Blog” page for posts. Create your pages first

Static pages do not automatically update. Only dynamic category pages do. The key in this process is to assign categories to each post first. Then set up a custom menu with links to the dynamic category pages in it.

So the process you need to use is:

c. d. Create pages and sub-pages for static content, not for posts https://en.support.wordpress.com/pages/

All this information is crucial. I guess that I can arrange my categories in alphabetical order in//en.support.wordpress.com/menus/view-all/#changing-the-order-creating-sub-menus.
Two more questions. 1) I want to get rid of the category : ‘La Guerre des fleurs’ but it is quite impossible. All articles, published under no category, get dumped there. ; 2) My reseach box disappeared. How to I get it back ?
