Sticky posts are not included in the number of post per page. Sorry, but you can’t change this on WordPress.com themes.

Any Idea , how do I post new posts directly to category, and do not make them appering in index… ?

How about manually showing the category on your sidebar using the Links Widget instead of the Category Widget?
http://en.support.wordpress.com/widgets/links-widget/
(please note this will not automatically update the number of posts as the Category Widget does)

I’m sorry but there is a default category sutomatically assigned to every post you publish. This is “uncategorized” however, you can create and designate another default category if you wish. But “no” you cannot create posts that do not appear in the default category.

I forgot to say above that every post you publish will also automatically appear in the Archives pages as well as in Categories pages in accord with the categories you assign to it, and if you do not assign categories to a post, then it will appear in the default category.
