Stupid blonde upgrades her blog

I host my blog on my own domain. I wanted to upgrade to WordPress 2.3.1, following this Three Step Upgrade: http://codex.wordpress.org/Upgrading_WordPress
I did not take a backup first (yes, I know it was stupid!).
I probably also ignored the fact that I was not supposed to replace the plugins and themes folders. Is it here that the blog posts and comments are stored (I hope not)? Will this cause problems?
When I tried to follow the link http://example.com/wordpress/wp-admin/upgrade.php, I got a 404 Not Found.
If I enter my blog address, I get the error message: Fatal error: Call to undefined function: add_filter() in /blog/wp-includes/default-filters.php on line 8
How can I fix this? I hope it is not all deleted. :(

Just to put your mind at ease, the posts and comments and such are in an SQL database so they are safe.

OK, thanks. It might be some plugins that cause the problem.
How do I deactivate my plugins if I don’t have access to my Administration Panels?

Hey, it’s okay. I could have given her instructions too but, if we do start giving self hosted bloggers instructions on the wordpress.com forum they are likely to return here instead of going to the wordpress.org forum.
