Subpages questions for Twenty Ten

I don’t know if it’s possible to get these questions answered at this point as I haven’t added subpages yet, I’m just thinking ahead.
I added a page “products” (nothing in it yet) and will eventually have subpages to the actual products. My preference would be to have the sidebar completely replaced by a subpages menu without the “recent posts” bloggy-type stuff appearing on those pages. The subpage menu should appear on every subpage (I’ve read that sometimes it only shows on the parent page?).
If this doesn’t work, my other question is: is there any way to hide the Pages widget (or custom menu widget, if that one makes more sense to use once I actually have subpages) in the posts display (but in that case, it’s ok to show the pages + all other widgets within the subpages)?
Final subpages question: is there any way to either disable the link “Products” as I’m currently not seeing any sort of grand need for an intro page there, so people can just click directly on product pages in the submenu? OR…to make it so the initial “Products” link goes to the most recently-added subpage?

There really isn’t any way to control or set which widgets appear on which pages. That is set in the theme. Some show the widgets on all pages and post pages, some on post pages only.
You can turn the “product” tab into sort of just a dummy tab (doesn’t link to anything).
Create a custom menu (if you are not yet using one) and then create a custom link for the “products” rather than a page. Enter any URL you want as you will be deleting it shortly. After adding the products “custom link” to the menu, click on the edit link for that menu item and delete the URL. The product tab will no lead nowhere but you can still put sub pages under it.
