  Are subscribers only notified of new posts (that are posted on the main page). Or are they notified any time a change is made, such as adding new content to other pages?

  Only when the post is published originally.

  It’s only Posts that go out in the RSS feed and not Pages. Maybe this would work for you. You could QuickPress (on the top right hand corner of the Dashboard) to publish a very brief post stating that a particular Page has been updated and include a link to the Page.
