How do I change the message people get when they subscribe? It says ‘Howdy.’ and makes the site look like it’s called Money Up Howdy in the subject line of the email.

Seems like your site is not hosted on WordPress.com but a self-hosted WordPress site. See the differences between the two here.

I see you’re using the Jetpack subscription widget on your site. You can edit the message subscribers receive when signing up via that plugin from Settings ->Reading in WP-Admin, so this page:

staff-zara, please refrain from suggesting specific plugins to users. You don’t have in-depth knowledge of how their sites are set up, and unless you have personal experience with a specific plugin, you should not be recommending that others use it. In this case following your advice and switching to MailChimp would mean the OP instantly loses all of their current WordPress.com and email subscribers via Jetpack.
Rather ask for more information to help you understand exactly what the user is speaking of.
