Supported versions of MacOS?

Hi, I am feeling confused because the behavior of WP editing and especially template editing that I see on my screen does not match what is in the tutorials, especially the videos. I’ve been tearing my hair out (not literally) trying to figure out what I am missing.
I can’t figure out how to get to places that are shown in the tutorial videos. For example, the vid for how to edit header elements starts out showing a very WYSIWYG looking edit screen of a site that has an edit bar at the top including a list view icon. I have not been able to find a way to get to such a view in my current system. When I edit a page I do not get anything like that.
Could it be that I am using too old a version of MacOS on this Mac mini? I am running macOS Mojave 10.14.6 and the latest update of Safari for that version of macOS.
Do I need to finally bite the bullet and upgrade to Monterey? What is the minimum supported macOS version for working with WordPress these days? Could a too-old OS version be my problem?

What you describe here sounds like the old classic editor that was replaced with the block editor when WordPress 5.0 came out in late 2019. That classic editor is still available via the Classic Editor plugin on all WordPress.com sites, but it’s not the default option. If you’re watching tutorials using that editor, those tutorials are based on a very outdated version of WordPress :)
And if you’re trying to edit templates in the site editor at Appearance ->Editor, you won’t have access to the classic editor at all – the site editor is a brand new feature that was introduced in WordPress 5.9 in January this year, and was built to only use blocks to modify a theme’s templates, and has never had a “classic” version. So your MacOS version has nothing to do with it in this case: if you’re using an older version of Safari, all features might not work properly, as the WordPress software only supports the two most recent versions of any browser (so for Safari that’s 14 and 15). But what features(including the editors) are available on your site depends on the WordPress version, and all WordPress.com sites are always on the most recent version, which is currently WordPress 6.0.
Can you tell us what you’re trying to do? Then we can point you to the specific steps, and if we have one, a current video tutorial on how to do that.
