  Hi, I want to change my website to an online store instead of a blog. I want to add a blog to the online shop. Is this possible? Or should I start with a blog first? Also, if I purchase a plan I can use a custom domain (i.e. drop the wordpress.com)?

  I want to change my website to an online store instead of a blog.

  To use Store on WP.com, you will need to be on a WordPress.com Business Plan, and have previously installed a custom plugin or theme. You can find more information from this link about WordPress Stores. And you can see details on upgrading to Business plan from this link.
