Switched to WordPress.org– Less Custom Options??

Much thanks to the response here on the forums, I switched my website from wordpress.com to wordpress.org, after purchasing hosting from bluehost. There’s just one problem, all of the simple customization UI appears to be missing.
For example, previously, it was super easy to change my various fonts, choose from a palette of colors, and other options, but now the side bar limits me greatly. Is there a way to get it to be like WordPress.com’s options, or is there a plugin that’ll give me more custom decisions with my themes?

The forums for wordpress.org are here: http://wordpress.org/support
I can give you a hint : the gui feature depend mostly on the themes (out of the warm wordpress.com casa). Thefore if you need specific help with the theme you have chosen, they might have a support page at their website. (I have tried some of their themes, they are clean and work well!).
