“The editor has encountered an unexpected error” when trying to add photos

I encountered this error when I tried to add a photo to my post:
I tried installing the classic editor plug in to fix it, and this seems to have removed the functionality of my post editor. I can add photos, but cannot edit or arrange them. When I try to remove the classic editor, I get this error:
I convert back to blocks to remove the poorly formatted gallery of images, and I get the first error message again. I am trying to add photos from my media library because that is the only way wordpress will let me upload images. Can you please help?
The blog I need help with is: (visible only to logged in users)

I was able to find a work around:
- convert to classic block
- convert to block
- insert gallery, upload images from desktop, get JSON error
- replace image (since now I have the correct formatting, but a greyed out box) with an image from my media library
This doesnt seem like how this should work, so I would still love to know what is going on with my site and why I only seem to be able to add images from my media library.
