Why not go to Dashboard > Appearance > Header and determiner the required header size. Then crop the image to fit that size before uploading it. That way you will not be wasting free images uploading space, wont’ be fiddling with cropping and troubleshooting and you will get the best possible image quality.

i did do this but what i see on screen doesn’t match the crop i selected. Does it depend on the size of my computer screen?

In this theme yes. The image width is variable and the height jumps to different values at different screen sizes. The ideal header image size is 2000 by 500px. I hope that helps.

Every theme has both a detailed theme description page and a live demo site:
Example:
http://theme.wordpress.com/themes/celsius/
http://celsiusdemo.wordpress.com/Newer themes do not necessarily have sidebars on every page in the blog, some have hidden widget areas, and many themes are responsive layout themes.
See here http://theme.wordpress.com/themes/features/responsive-layout/
Know that responsive width means the layout adapts depending on the size of the device being used to view your site. When responsive width themes are viewed on mobiles sidebars appear below the posts in order to provide as much space as possible for reading.
The mobile theme is a completely different theme so when we use a responsive width theme we go to Dashboard > Appearance > Mobile and disable the mobile theme.
P.S. I am a foodie blog follower. IMNHO what foodie bloggers get hung up on is HUGE images and embedding too many images.
