  I’m about to set up 2 websites, however can’t find a theme that would fit. I’m looking for something really simple.

  Definitely https://harmonicdemo.wordpress.com/. I think https://singldemo.wordpress.com/ and https://coherentdemo.wordpress.com/ might work too, especially if you plan on posting.
