Themes and custom headers and widgets

I’m new to all this and have spent a slow morning going through available themes to pick one with a customizable header.
I’m having difficulty to find something that appeals to me (simple) yet can allow for the “just another wordpress” line to be removed.Found some but am confused as to which widgets will appear. Some themes have things already attached so those widgets don’t show up in the widget selection area, but some seem just not to be available. I would have thought blog stats would always be available but it doesn’t seem to be. Am I just missing something?
And biggest confusion: Meta. This shows up in some simple designs that I would use, but it looks to me like I’m giving readers everywhere access to my files, editing, etc. When Meta stuff is in the widget column is that what’s happening? Or can I proceed knowing that it will only show up that way on my machine?

Assuming that you are hosted here, you can remove the “just another wordpress” line by going to settings>general settings in your dashboard.
A lot of themes have some widgets already showing up but as soon as you add your own widgets, those will disappear. If you want those widgets back, you have to add them manually. Widgets are available in in dashboard under design>widgets.
Meta is also a widget. No one can log into your site without you having given them your username and password.
