Not sure what you mean by a “word menu.” The Canard theme guide says:
Canard can display up to four Custom Menus: one in the theme’s header (Primary Menu), two above the header on large screens and above the footer on small screens (Secondary and Social Menu) and one in the footer (Footer Menu). Footer, Secondary and Social Menus only support top-level links; sub-menu items aren’t displayed. To set up your menus, go to Appearance → Menus.
I noticed that one zoom click in on my PC (monitor size 12″ x 9″) results in the primary menu being changed from a horizontal menu below the header image to a menu hidden behind a three-bar icon above the header image. This suggests that on smaller screens, such as those on mobile devices, the menu will activated by the three-bar menu. Zooming out several clicks resulted in no change of the primary menu location.

That should have been
…changed from a horizontal menu bar below the site title, on the demo, to a menu hidden behind a three-bar icon to the right of the site title.

You can replace the standard three bars in the menu toggle button with “Menu” with the following.
.menu-toggle::before { content: "Menu"; left: -5px; top: -3px; } -
