  how do I get the time right; or am I stuck on GMT

  You can change your time zone in your site’s WP Admin dashboard>General Settings>Time Zone. http://en.support.wordpress.com/settings/general-settings/2/#timezone

  Stats, however, I believe are always shown in GMT.

  You can set your timezone from your Dashboard > Settings > General screen. You can even change the date and time formats to your liking on that screen.

  So no, you don’t have to get stuck with GMT :-)
