To what extent is my privacy policy covered by WordPress

I know about new GDPR regulation which requires there to be even clearer and more transparent privacy policies for websites. At the moment I am on a free plan, therefore, have the mysite.wordpress.com.
When I go on my site a disclaimer from WordPress appears stating that the website uses cookies and links to their own cookie policy.
My website has the ability to comment under blog posts at the moment and to contact me by email, but I may introduce a emails subscription service in the future.
Where can I find out on my site what cookies it uses, is there a single place which provides me the data that I need to include in my privacy policy?
Also, when writing this policy, how much is covered by WordPress in teams of data security and steps to data breaches, and how much of that do I have responsibility myself.
I have the installed WordPress version which comes up with a draft privacy policy which I am using as a template, but what are the main things that I need to include.
