Totally confused… is my site wp.com or .org? how do i make it private?

I wanted to begin to play with making a website for a new venture in advance of actually going live with the venture. I signed up with bluehost, and installed wordpress via bluehost, creating http://www.essexhypno.com.
Firstly, I can’t see an option for making it totally private, while I play with it. I certainly don’t want people reading the pages while I’m still messing around with them. When I go to the dashboard, the options under settings>privacy are only re. hiding from the seach engines. There is no third option that I have read about, whereby you can choose for the blog to be private.
Now I am also confused as to whether my site is being set up via wp.com or wp.org, and what difference that means?? I want it to be fully customisable.
Can anyone help, with the privacy issue and how I can see what type of WP site it is?

That site is a WordPress.org install and all support for it must come from http://wordpress.org/support Please read this for clarity > WordPress.com vs. WordPress.org
