Hi there,
For our built in payments option it is not possible to set up a different payment processor. We use Stripe and that is not something that can be changed:
The Payments feature lets you accept credit and debit card payments for goods, services, subscriptions, memberships, donations, and more. The Payments feature can be used to create recurring revenue or one-time payments to your site. Payments Options The Payments feature has multiple block options for various kinds of payments, including the Donations Form block, the Payment Button block (The good news is that you can set up 3rd party billing by adding the WooCommerce plugin to your site, which will add ecommerce functionality under your Business Plan.

With WooCommerce you can pick any processor you wish, and your fees would be with them directly, we do not make a transaction fee from 3rd party transactions on your WooCommerce orders. You can choose from the extensive list of options here: https://woocommerce.com/product-category/woocommerce-extensions/payment-gateways/
Hope that helps. Please let us know if you have any more questions.

I’d like a clear answer, please, on the fees for using Stripe with a hosting plan with WordPress eg on the Personal plan : is it 8% (for WP) PLUS 2.9% + .30c (for Stripe) : ie a total of around 11% per transaction?

@rhoneracing take a look at this fee sheet and let us know if this answers the question more clearly for you: https://wordpress.com/support/wordpress-editor/blocks/payments/#related-fees
