If a domain is not redeemed by the original registrant, the domain is usually then returned to the pool of available domain names and can be registered again on a first-come, first served basis after the 80+ day redemption period has elapsed. Also, it is common for back-order companies to wait for domains to be released and purchase them the moment they become available. There may also be another individual who likes the domain waiting to buy it.
This means that even if your domain is released, another party can purchase it before you get the chance. You can read about this process here:

If you want to retain the domain
yourbar.ca, the only way you can guarantee that is to revert the cancellation here and pay for the renewal (and redemption fee if applicable), then once the ICANN-required 60 day hold is released, you can transfer it to the registrar of your choosing.Or, you can take the risk to wait for the domain to be released for purchase again. There’s no way to be notified when this happens, so you do risk someone else purchasing it before you can. If that happens, the other party would own the domain and you wouldn’t have any recourse to recover it.
