Transition from existing to a new website. Subfolder or Subdomain?

    Hi!
    I have an existing website, joyride.bike, installed on the root of server. I need to develop a new website, using a different theme but keeping the same domain, joyride.bike, on the same server, and make the transition as fast and seamlessly as possible. What would be the best practice without problems and minimal downtime?
    Should I make the new wordpress installation on a subfolder of the root or is it better to use a subdomain (new.joyride.bike) and then change it to joyride.bike when it’s ready to go live?
    How can I make this change without running into conflicts and problems with databases?
