Trying to have two different menus.

Hi folks I`m pretty new to WordPress and have had a very frustrating day.
I am trying to have a menu under the header and a services menu in the side bar.
every time I make a new page it adds a link in the header menu which I don’t want.
I found this site http://carpetcleaning-wimbledon.co.uk/ which has achieved this.
How can I exclude pages in the header menu?

For your WordPress.com blog at http://caravansitesinscotland.wordpress.com/ You can do the following:
1) Set the pages you want to appear in the sidebar as child pages to a page you want in the navigation header.
2) Add a Pages Widget to the Sidebar and exclude the pages you do not want to appear there.This will hide certain pages from the navigation so that they only appear in the sidebar. You can find more information about those two steps at:
