Twenty Sixteen (free) – help required!

Hi all,
I’m creating a basic website for my friend, who writes stories in two categories. I’ve managed to split the two, so that one can choose which story-line to read in the menu. When you click on them, it says “Category: xxx” at the top of the page. How can I make that disappear?
Another thing I’d like to do, is only have one story at the front of the category pages, so when people want to read more, they have to go older or newer after each story (like book pages). How can I make that happen?
Your help would be greatly appreciated, looking forward to being able and edit the website even further!

Category and other archive pages follow the number of posts set to display on the blog page. You can modify that number in the WP Admin dashboard under Settings > Reading here:

Change 5 to 1 next t “Blog pages show at most.”
Just keep in mind that it’s not possible to display a different number of posts on the blog page and on archive pages.
An alternative route to accomplish what you’re after — including modifying the category titles — would be to create your category pages using the Display Posts shortcode instead. That would let you display the exact number of posts you want and add any page title you like, without being constrained by the way category archives are generated by default.
