  I have Twenty Ten theme
  How I can have more menu in my theme?
  and not only one?
  how can I have my categories on the menu-black toolbar?

  You can have more items in your menu by creating your own custom menu, as described here:
  http://en.support.wordpress.com/menus/

  Further down that page, there are instructions to put your categories in your menu:
