  Hi,

  The image below the header navigation menu is a cover image within a cover block. See the Cover Block support page. The Edit Image section of the support page briefly describes how to replace the image.

  The text in the header, paragraph, and button blocks within the cover block on the homepage may be edited by clicking on any block in the editor and editing the corresponding text. How to remove a block is described in the Removing a Block section of the WordPress Editor support page.
