  So if I changed my username, I can’t change it back? I was starting new on another site and didn’t know this, so is this true?

  That’s correct and it’s clearly stated in the relevant support doc Change your username at http://en.support.wordpress.com/change-your-username/

  Once you change your username you will not be able to change it back and the old name will not be available for you or anyone to use. If you just want to show your name differently please only change your Display Name. https://en.support.wordpress.com/change-your-username/

  Note also that accounts are never deleted but can be deactivated https://en.support.wordpress.com/deleting-accounts/
