Using CSS to edit theme

Apologies if this is explained somewhere on the site, but I am brand new to web development and CSS. How do you use CSS to customize your theme? For instance I want to replace the site title with my company logo but can figure out how to write the CSS for it. I have done independent research and everyone says to update the Header.php file or the .css file…where are these files? All I have seen so far is the CSS editor in the Customize section of my blog. How is someone who is brand new to this skillet suppose to know these things.
