Variable Product question

Hi all, I looked over the docs for variable products and I am not sure it can deliver what I need. It wasn’t even clear to me if I could customize the variables or have to keep it basic like color, size, etc. I use woocommerce on a business wordpress.com site. I am not sure I need a plug in and so forth. I am new to wordpress so any advice would be great. What I am looking for is a way to offer a package service but I want to allow users to browse the options and as they see what they like they can add it to the core package with the price adjusting accordingly. So for example, let’s say you want a custom toy. This is a made up example but you’ll get the idea. Let’s say I want them to browse the options and explore different things like skin texture, color, types of hair, whether or not it can record sound, etc. What are my convenient options for something like this?
