  When I’m embedding videos, how can I get a thumbnail to post when sharing on Facebook, etc.?

  It’s up to Facebook to decide what images to pull as a thumbnail when sharing one of your posts. Currently, only the first five images of at least 200×200 pixels are selected as thumbnail options:
